1 lb thinly sliced and deboned salmon (ensure salmon has been properly frozen in your deep freeze and defrosted slowly in the fridge overnight before slicing)
3 fresh squeezed lemons
3 tbsp olive oil
1 tbsp sesame oil
2 bunches fresh green onions chopped
3 tbsp capers rough chopped with juice
2 big shallots rough chopped
1 bunch dill rough chopped
Handful of Thai peppers chopped (depending on preferred spice level)

Mix everything together and then salt to taste and let sit in your refrigerator for at least 1 hour before serving! Will hold in fridge overnight for next day serving as well. We like to serve with tortilla chips!
